cold start stutter

When I start my car in the morning or when sitting for 3 hours or more. It idles really rough. Like RPMs jump and then car almost stalls, then jump again. Then I take off and it's like i have loss of power and car stutters. Once the car warms up, I have no problems at all and engine runs perfect. Any suggestions?

Thanks for answering. 2000 LS1. Idles rough too. Now it's happening even when the car is warm. The temperature gauge drops to 100 from about 210 and the car stutters. Then corrects itself and drives fine.
