I'm not sure but if I was guessing that means they watch your air/fuel ratio as well, but I assumed they always did that on the dyno but guess not.

Yup, and nope.
Yes, the wideband is how they monitor your air/fuel ratio. and No, they don't always do this. It generally costs more because of the time involved to connect it. It's a good thing to have hooked up though. Good for tuning, and for safety.
